Vegan Black Bean Nachos by Teebs
serves 2
If you want to make yummy chips:
6 soft corn tortillas
cooking spray
sea salt & cracked pepper
1 garlic clove, chopped
1/4 of an onion, sliced and roughly chopped
1/4 of green, red, yellow, and orange bell peppers
(or just one full pepper)
2 t. chili powder
1 t. cumin
1/2 t. paprika
1/2 t. cayenne pepper
1 can black beans, rinsed and drained
1 C. vegan cheese (or so)
1/2 an avocado cut into chunks
cilantro, chopped
1/2 a lime, cut in wedges
Preheat oven 375.
To make tortilla chips, Lightly spray tortillas with cooking spray on both sides. Stack tortillas and cut in quarters with a sharp knife. On a parchment paper-lined baking sheet arrange slices so they don't overlap. Sprinkle with salt and pepper and bake until crispy. About 10-12 mins.
Gather chips together so they overlap.
While chips are baking, heat 1 T. of water or oil in skillet. Add onion and garlic until soft. Add peppers and cover with lid. Cook until the peppers begin to soften, adding water if needed and stirring often. Add all spices and beans. Cook until heated, about 2 mins. Pour evenly over beans. Top with "cheese." Bake until cheese melts. Serve with avocado, cilantro, and lime if desired.
I rarely measure ingredients like seasonings or herbs when I'm cooking. So because I made this recipe up I had to put approximately what I used, so use your own judgement.
When the last lime was squeezed, we blessed our food, well God blessed it. And we hit play and began to snack. We watched Mr. Magorium's Wonder Emporium. Very creative. Dreamy. Inspiring. Magical. I drank aloe-vera whole leaf juice with water and my mom had Starbuck's black iced tea. The lightening roared and our tummies were happy. It hit the spot! Very tasty!

I have to say, these were so delicious! the vegan cheese was actually very yummy! i want more!!
I've had vegan pizza quite a few times, and I've always enjoyed vegan cheese. It doesn't taste right on everything, but it is great on pizza. It has kind of a buttery flavor to it.
