Deliciously Cinnamony Vegan French Toast

On my days off, especially, this is my routine: I look at my phone with one eye, stumble out of bed, put on my toasty robe and slippers, freshen up and wander down stairs.. "Okay, what should I make today?" I ponder as I search the fridge for ingredients. Ooo.. leftover sliced potatoes... hmm but I want some maple syrup. I get my mustard colored tea pot going for the french press. Today's choice: Starbucks Casi Cielo. Perfect with some french toast. I picked out a new recipe and began... 

Deliciously Cinnamony Vegan French Toast (I call it)
       (serves 2) 

3/4 C. soymilk
1 T. flour
1 1/2 t. nutritional yeast
1/2 t. sugar
3/4 t. cinnamon
4-6 bread slices (I used whole wheat)
cinnamon sugar to sprinkle
maple syrup (I recommend Grade A light 100% maple)

Mix first 5 ingredients with whisk in a medium deep bowl. Heat a flat skillet with a little cooking spray or oil. Dip slices of bread, one at a time in batter and Cook each side until golden. Dab a little Vegan butter (or regular) on each slice and sprinkle with cinnamon sugar. Serve with maple syrup. 


When I had the last two slices of bread cooking, I put the potatoes on the other end of the skillet, poured my coffee and presto! Done! They were perfect. I didn't miss the eggs one bit. Thanks to How It All Vegan Cookbook. Full of delicious recipes. I did half the recipe, added extra cinnamon and the cinnamon sugar topping. Yummy!
