They say breakfast is the most important meal of the day. Well sometimes I don't have it until after 1.. but i sure do enjoy it. Today i had a taste for pancakes. Last night at home group we ended up talking about food for a long time. And someone brought up how amazing peanut butter is on pancakes and waffles. Hey, you have to try it. Don't shake your head. I'll never go back! I decided to add a twist to a favorite vegan pancake recipe from Isa's cookbook, Vegan with a Vengeance.
I also had a taste for something oaty with berries. But I always wanted to try chocolate chip pancakes.. I couldn't decide. So this is what I came up with:
1/4 C. whole wheat flour
1 C. oatmeal flour (blend in food processor to make "flour")
2 t. baking powder
1/2 t. salt
1 t. ground cinnamon
1 T. canola oil
1 C. coconut milk (soy or rice milk is fine too)
1 t. vanilla extract
2 T. pure maple syrup
Blueberries to toss in (I used frozen)
Chocolate or carob chips, (if daring, it's a little funky)
Lightly oil skillet and preheat pan over med-high heat.
In a large bowl, sift (or stir with a whisk, same thing) together flour, baking powder,salt, and cinnamon. In a small bowl, combine oil, milk, vanilla, and syrup. Add wet mixture to dry, mixing until just combined. Do not overmix or the pancakes will be tough. A couple lumps are okay.
Cook pancakes until browned on the bottom and bubbles form on top, about 4 mins. Turn over and cook until browned. Enjoy!
As I mentioned above, I had a weird craving for chocolate in my pancakes, so i threw a few carob chips in. Honestly I think it would have been better with out them haha. Mess around with what you like and see what works for you. But I do think this is a base recipe for vegan pancakes.
